Bellissima (Italian for beautiful) is a sparkling wine made from a blend of Glera and a splash of Riesling grapes. It is with great joy that we introduce the lovely Glera grape variety to Canada. This wine displays wonderful flavours and aromas of pear, lime and mandarin oranges.

This dry wine can be enjoyed with Charcuterie meats like Prosciutto, and soft and aged cheeses such as Brie and aged Cheddar.

2019 PINOT NOIR ROSE

This Ripasso styled wine was made from Cabernet and Merlot grapes using the Italian tradition of aging wine on the pressed grape skins from wine made using the Appassimento method and then aged in oak barrels for 12 months.  The result is a wine that displays jammy dark berry fruit aromas and flavours and supported by notes of oak and spice.

This medium body wine with supple tannins pairs well with grilled meats, charcuterie and hard cheeses.

2019 CABERNET MERLOT RIPASSO

This unique blend was crafted using Cabernet Sauvignon (35%), Cabernet Franc (35%), Merlot (17%) and wine made from the dried Corvina (13%) grapes.  
It is a deep ruby color bursting with pronounced red fruit of raspberry and strawberry on the nose of as well as hint of blackberry.  This is also evident on the palate more after decanting for about 20 minutes but maintain a serving temperature of 16-18 degrees Celsius.  A nice full-bodied wine in which the finish is good with notes of these lovely flavors of wild berries and dried cranberries. The wine is bold but supple.  The tannins are medium, and this wine should age and soften further over the next few years.
This wine pairs well with charcuterie, hard cheeses such parmesan, grilled steaks, chicken, pasta Bolognese, fish stew and pesto crusted salmon.

Serve at room temperature (16 to 18 C). Enjoy with grilled red meat, or 
charcuterie and hard cheeses.

Our Meritage blend is created only on the finest vintage years. The 2012 vintage gave us a rich and full-bodied red wine made from specially selected grapes from our oldest vines. This blend consists of 33% Cabernet Franc, 33% Merlot, and 34% Cabernet Sauvignon which was aged in smaller French oak barrels for over 60 months, creating aromas of blackberries and currents, with silky tannins and a lingering finish of dark fruit and spice on the palate.

Serve at room temperature (16 to 18 C). Enjoy with coffee rubbed steak, a good cut of prime rib, or bison burger.

2012 MERITAGE (Bordeaux Style)

The Nebbiolo is a red wine grape varietal predominately grown in
Piedmount region and makes up the wines of Barolo and Barbaresco. The name “Nebbiolo” is thought to derive its name from the Italian word “nebbia” which means “fog”. During harvest, a deep, intense fog sets into the Langhe region where many Nebbiolo vineyards are located.
Rarely found in Niagara, the grapes in this wine were sourced from our
Estate vineyard atop the Niagara Escarpment. The grapes were hand picked, sorted and aged 70 months in oak barrels. This medium to full bodied wine displays a rich ruby colour and wonderful red and blackfruit aromas and flavours of blackberries, cassis with raspberries, and a hint of spice with very smooth slight oak overtones.
Decant for at least 15 minutes and enjoy at room temperature (16 to 18 C ) This wine has many pairing options including enjoying it alone. Food pairing options: hearty pastas with Ragu , risotto with truffles or mushroom cream sauce, roasted duck, veal or chicken Milanese ;hearty Cioppino (Italian tomato fish stew) , Tuna tartare with Avocado, Salads with Blue Cheese , Chevre and pears as well as Fontina cheese.

This wine was made from Cabernet Sauvignon grapes, which were hand harvested and naturally dried for 60 days prior to being fermented.  This wine, which was barrel aged for 48 months, displays a dark red colour, and beautiful aromas and flavours of raspberry, cassis, dried figs and dark chocolate supported by oak and spice. The Appassimento process has contributed to round, velvet tannins and the impression of sweetness.

Enjoy with hardy beef or game stews and aged cheeses like Parmigiano Reggiano and Gorgonzola or on its own with family and friends.

2014 Cabernet Appassimento

This wine was made from Cabernet Sauvignon and Merlot grapes which were hand harvested and naturally dried in our drying rooms for 60 days prior to fermentation. The wine as then barrel aged in French oak for 48 months. This wine displays a ruby garnet color and, on the nose, beautiful aromas of raspberry, blackberry and cassis.  The flavors display much of the nose characteristics along with hints of pomegranate, dried cherries and spice and oak on the finish. The Appassimento (drying) process contributes round, velvety tannins, an increase of alcohol, and an impression of sweetness. 

Decant for at least 20 minutes and serve at room temperature (16 to 18 C ) although 16 is recommended.. Enjoy with hardy beef (ribeye/beef short ribs) or wild game stews, bison burgers, or aged, strong cheeses like gorgonzola and Pecorino Romano.  It pairs.          with stronger fishes such as Tuna and swordfish and hot/spicy salmon.

This white wine was made from red grapes (Cabernet Franc), which were lightly crushed and pressed to minimize colour extraction from the skins.  The juice was then fermented slowly using selected yeast strains to produce a truly unique wine.

The result of using red grapes for this wine is a texturally rich and engaging wine that exhibits aromas and flavours of stone and citrus fruit balanced with crisp acidity.  This wine will pair well with hard cheeses, fish and fresh salads or enjoy in the company of family and friends.
